Tomato and peach salad with mozzarella

Ingredients for 2 servings:

  • 3 tomatoes
  • 1 peach(s), ripe
  • 1 ball of mozzarella (125 g)
  • 1 handful of basil
  • 2 peppermint leaves
  • 2 tbsp balsamic vinegar, lighter
  • 4 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Dice the tomatoes, peach, and mozzarella and place them in a bowl. Finely chop the basil and peppermint and add them. Make a dressing from the olive oil and balsamic vinegar, season with salt and pepper, and pour over the salad. Mix well.
