Tomato-avocado with fried egg

Ingredients for 2 servings:

  • 1 tbsp oil for frying
  • 4 eggs
  • 4 tomatoes
  • 2 avocados
  • e.g. lemon juice
  • salt and pepper
  • olive oil
  • possibly balsamic vinegar or balsamic cream
  • some basil leaves

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Low-carb breakfast

Heat the oil in a pan and fry the fried eggs. Meanwhile, wash the tomatoes and slice them thinly. Halve the avocado, remove the pit, and scoop out the core with a spoon. Slice the core and drizzle with a little lemon juice. Divide the vegetables evenly between two plates, season with salt and pepper, and drizzle with oil and vinegar to taste. Scatter basil leaves over the top and serve with the fried egg.
