Tomato chutney

Ingredients for 4 servings:

  • 500 g tomatoes
  • 500 g fruit, e.g. papayas, bananas, kumquats
  • 250 g onion(s)
  • 2 tsp salt
  • 1 red pepper
  • 125 ml vinegar (fruit)
  • 375 ml white wine
  • 100 g raisins
  • 1 lemon(s), untreated, grated peel
  • Salt
  • Pepper, from the mill

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and deseed the tomatoes, and dice them. Prepare the fruit accordingly, also dicing or slicing it. Peel and finely chop the onions, peel the garlic cloves, and grind them into a paste with salt. Deseed and wash the peppers, and cut them into very fine cubes or strips. Place the tomatoes, fruit, onions, garlic paste, and peppers in a saucepan. Fold in the fruit vinegar, white wine, raisins, and lemon zest, stir in the gelling sugar, and bring to a boil. Simmer for 6-8 minutes, stirring constantly. Season the chutney generously with salt and pepper, pour into clean preserving jars, and seal tightly. Store the tomato chutney in a cool, dark place until ready to serve.
