Tomato couscous with mint

Ingredients for 2 servings:

  • 6 m.-large tomato(s)
  • 2 cloves garlic
  • 1 tbsp mint, dried
  • salt and pepper
  • some sugar
  • some chili powder, optional
  • 1 tbsp vegetable oil
  • 1 lime(s), the juice
  • 150 ml couscous
  • 250 ml water

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 5 minutes; Total time approx. 1 hour 35 minutes

Summery, light and fresh

Heat the oil in a large pan and fry the couscous until crumbly. Pour in hot water, cover, and let stand for a while. Then fluff the mixture with a fork and let cool. Dice the tomatoes and place them in a bowl. Crush the garlic and add it. Season with salt and dried mint, and mix everything well. Let stand for about 30 minutes. Mix the couscous and tomato salsa well, season with mint, pepper, sugar, and salt (and a little chili, if you like), and add a little freshly squeezed lime juice. Let stand for a while before serving. This can also be prepared a day in advance.
