Ingredients for 1 servings:
- 4 potatoes
- 2 tbsp olive oil
- ½ ball of mozzarella
- 10 cherry tomatoes
- 2 sprigs basil
- e.g. salt and pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour
Wash the potatoes, including their skins. Cook in a pot lightly covered with water for about 20 minutes. Place the cooked potatoes on a baking sheet or in a casserole dish and gently mash them with a glass or small saucepan. Now spread 2 to 3 tablespoons of olive oil over the potatoes. This will make them really crispy. Wash the tomatoes, halve them, and arrange them on top of the potatoes along with the torn mozzarella ball. Place the whole thing in a preheated oven at 220 degrees Celsius (top/bottom heat) for 30 minutes. Garnish with salt, pepper, and fresh basil.
