Tomatoes in Batter

The perfect tomatoes in batter recipe with a picture and simple step-by-step instructions.

  • 70 g Flour
  • 3 Heaped tablespoon Oatmeal
  • 1 Egg
  • 5 Oven-Baked tomatoes in oil
  • 12 Basil leaves
  • 1 Chili
  • 3 Dried olives
  • 1 Shallot
  • 1 Clove of garlic
  • 2 Pinches Sugar
  • 2 Salt and pepper
  • 2 Clarified butter for deep-frying
  1. Chop the tomatoes, chilli and garlic. Cut the shallot into small cubes. Chop the basil. Cut the olives into rings.
  2. Mix the flour with the egg. Add the remaining ingredients and work into a dough. If the dough is too runny add a little more flour.
  3. Let the dough rest for 1 hour. Shape into balls with two spoons and fry in clarified butter for about 8 minutes. Drain on kitchen paper and check whether the balls (I had eight) are done.
  4. There was roasted peppers and a yogurt dressing.
