Tomatoes in Batter
The perfect tomatoes in batter recipe with a picture and simple step-by-step instructions.
- 70 g Flour
- 3 Heaped tablespoon Oatmeal
- 1 Egg
- 5 Oven-Baked tomatoes in oil
- 12 Basil leaves
- 1 Chili
- 3 Dried olives
- 1 Shallot
- 1 Clove of garlic
- 2 Pinches Sugar
- 2 Salt and pepper
- 2 Clarified butter for deep-frying
- Chop the tomatoes, chilli and garlic. Cut the shallot into small cubes. Chop the basil. Cut the olives into rings.
- Mix the flour with the egg. Add the remaining ingredients and work into a dough. If the dough is too runny add a little more flour.
- Let the dough rest for 1 hour. Shape into balls with two spoons and fry in clarified butter for about 8 minutes. Drain on kitchen paper and check whether the balls (I had eight) are done.
- There was roasted peppers and a yogurt dressing.
