Tortellini salad with tomatoes and mozzarella

Ingredients for 4 servings:

  • 1 pack of tortellini with spinach and ricotta filling
  • salt water
  • 20 cherry tomatoes
  • 1 ball of mozzarella or 1 pack of mozzarella minis
  • 1 garlic clove(s)
  • 6 tbsp olive oil
  • 2 tbsp Balsamic vinegar bianco
  • salt and pepper
  • some sugar, maybe
  • some basil, fresh

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

for grilling, as a side dish or main course

Cook the tortellini in salted water according to the package instructions, then rinse and let cool. Finely chop the garlic and mix with the vinegar, spices, finely chopped basil, and oil. Wash the tomatoes and halve or quarter them depending on their size. Cut the mozzarella to the same size. Mix the pasta, tomatoes, mozzarella, and the dressing, seasoned to taste. Let stand for at least one hour. The quantities given are for side dish portions.
