Tortellini with cherry tomatoes and green beans

Ingredients for 2 servings:

  • 400 g tortellini (or Maultaschen)
  • 200 g cherry tomatoes
  • 400 g beans, green
  • 1 small head of iceberg lettuce
  • 2 onions, red
  • 6 tbsp apple cider vinegar
  • 6 tbsp olive oil
  • 1 bunch of parsley
  • salt and pepper
  • Sugar
  • Parmesan, Pecorino as required

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with iceberg lettuce and vinaigrette

Cook tortellini according to the instructions. Wash and halve the cherry tomatoes, slice the onions into thin rings, trim and wash the beans, and cook in salted water for about 10-15 minutes. Combine the tortellini, cherry tomatoes, onions, and beans in a large bowl and sprinkle with cheese. Serve with the iceberg lettuce, cut into strips. Prepare the vinaigrette: Wash and trim the parsley, shake dry, and chop. Mix with apple cider vinegar, oil, sugar, salt, and pepper. Serve with the salad and the tortellini. It can also be mixed together in a large bowl and served.
