Ingredients for 4 servings:
- 1 pack of noodles (Philippine Canton noodles)
- 1 pack of glass noodles
- 1 onion(s)
- 4 garlic cloves
- 4 carrots
- 1 handful of beans
- 500 g chicken
- 1 liter vegetable broth
- n. B. Oil
- salt and pepper
- Soy sauce
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Philippines
Soak the glass noodles in a container of cold water. Finely chop the onion, garlic, and vegetables. Cut the meat into pieces, marinate briefly in soy sauce, and season with pepper. Heat the oil in a wok and fry the meat until cooked through, then remove and set aside. Then fry the vegetables in the wok. Pour in 1 liter of vegetable broth and heat until hot or boiling. Cut the glass noodles a few times with kitchen scissors and add them in portions to the hot broth. Add the Canton Pancit noodles to the broth. Stir everything and season with soy sauce. Stir occasionally to prevent sticking. Wait until the water has evaporated. If the noodles aren’t cooked yet, add a little more water and cook until tender. Season everything again with soy sauce. Add the meat and heat everything up. Pancit can be eaten on its own or served with basmati rice, traditionally in the Filipino style. The vegetables can of course be varied.
