Tuna curry

Ingredients for 4 servings:

  • 1 large onion(s)
  • some vegetable oil
  • 400 ml coconut milk
  • 2 cans of tuna in its own juice
  • 50 ml curry sauce (mango curry)
  • 50 ml broth
  • 10 apricots, dried, more if desired
  • 2 garlic cloves
  • 1 dashes lemon(s)
  • 3 tbsp Thai curry powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel the onion, slice it into wedges, and fry it in a little vegetable oil until golden brown. Briefly fry the finely chopped garlic cloves. Then add the drained tuna and mix everything well. Deglaze with the stock and coconut milk. Stir in the mango curry sauce along with the Thai curry powder and the chopped apricots. Finally, season with a squeeze of lemon. Serve with rice.
