Tunisian vegan tomato sauce

Ingredients for 2 servings:

  • 1 can Pizza tomatoes , 400 g or 6 peeled tomatoes
  • 1 m.-sized onion(s)
  • 2 cloves garlic
  • ½ tsp salt
  • ½ tsp Ras el Hanout
  • 1 tbsp, heaped tomato paste
  • 1 tsp, heaped harissa
  • ½ tsp pepper
  • some parsley
  • some oil

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

First, finely chop the onion and peel the garlic cloves, then mince them using a garlic press. Sauté these two cloves with the tomato paste, harissa, salt, and ras el hanout over a high heat until the onions become translucent but do not burn. Then add the pizza tomatoes or peeled tomatoes. If using peeled tomatoes, add a little water, stir well, set the heat to medium, and simmer for 10-15 minutes, stirring occasionally. Then add the black pepper and a little parsley, turn the heat up a little, and simmer for 5-7 minutes, stirring occasionally. This sauce is served with bread. If you only want to have this sauce as a meal, one portion will not be enough. But as a side dish to chicken, for example, one portion is perfectly sufficient.
