light and delicious
Cut the turkey breast open enough to form a roll, then season with salt and freshly ground pepper. Combine the paprika paste, fig paste, curry paste, and cream cheese in a smooth mixture. Spread this mixture over the turkey roll. Cut half a peach into small cubes and place at the beginning of the roll. Place a slice of sliced cooked ham on top, and repeat with the cheese. Then roll the whole thing into a roll. Either tie it with kitchen string to form a roll or seal it at one side with roulade pins. Grease a baking dish with a little butter. Place the roll inside. Dice the remaining peaches and arrange them around the roll. If you used canned peaches, you can add the juice. Cover the whole thing with aluminum foil and place it in the oven at 160°C for about 1-1.5 hours. When the cooking time is finished, remove the roll and let it rest for a while, wrapped in aluminum foil. Puree the stewed peaches with a hand blender and season to taste. Top with 2 tablespoons of crème fraîche. Cut the roll and serve on a plate with rice and the sauce. Paprika paste with walnuts and fig paste is available at health food stores.
