Ingredients for 4 servings:
- 300 g lentils
- 1 onion(s), finely chopped
- 1 bell pepper(s), red, finely chopped
- 1 bell pepper(s), green, finely chopped
- 3 tbsp vinegar
- 2 tbsp olive oil
- 1 tsp mustard
- e.g. salt and pepper
- 1 tsp sugar
- 1 bunch parsley, finely chopped
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Soak the lentils overnight. Boil them in fresh water until they are soft. Place the finely chopped onions and the finely chopped bell peppers in a salad bowl. Then mix with the vinegar, oil, salt, sugar, mustard, and pepper. Add the lentils and finely chopped parsley and mix well.
