Ingredients for 4 servings:
- 2 onions, chopped
- 2 clove(s) garlic, chopped
- 1 can white beans (approx. 250g)
- 2 carrots, diced
- 2 stalk(s) celery, finely chopped
- 1 stalk(s) leek, finely chopped
- 1 can of tomatoes, peeled, (approx. 400 g)
- 2 tbsp parsley, chopped
- 1 ½ liters vegetable broth
- 2 tbsp olive oil
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes
Sauté the onion and garlic in oil until translucent, then add the washed beans, carrots, celery, and leek. Roast everything slightly, add the canned tomatoes, deglaze with stock, and stir in the parsley. Simmer for about 30 minutes (depending on how tender you like the vegetables)! Sprinkle with Parmesan cheese and serve with fresh pastries!
