Two-tone Fruity Cream Cheese Cake

The perfect two-tone fruity cream cheese cake recipe with a picture and simple step-by-step instructions.

for the dough:

  • 180 g Flour
  • 3 tsp Baking powder
  • 150 g Butter
  • 150 g Sugar
  • 1 packet Vanilla sugar
  • 3 Pc. Eggs
  • 2 tbsp Orange juice, alternatively water

for the filling:

  • 8 sheet White gelatin
  • 750 g Lowfat quark
  • 75 g Sugar
  • 1 packet Vanilla sugar
  • 1 packet Grated lemon peel
  • 1 Can Apricots, drained weight 240 g
  • 250 g Raspberries
  • 250 g Cremefine for whipping, alternatively cream
  • Icing sugar for dusting
  1. Mix the flour and baking powder for the dough. Add all other dough ingredients and use the whisk of the hand mixer for approx. 2 – 3 minutes on the highest setting to form a smooth mixture.
  2. Pour the dough into a springform pan lined with baking paper and bake in the preheated oven on the middle rack at 180 degrees (or convection 160 degrees) for about 28 – 30 minutes until golden yellow. Then let the base cool down briefly, then remove it from the mold and turn it onto a baking rack lined with baking paper. Let it cool down and then peel off the baking paper. Cut the bottom once horizontally.
  3. For the filling, soak the gelatine in cold water according to the instructions on the packet. Mix the drained quark with sugar, vanilla sugar and lemon zest. Dissolve the squeezed gelatin in a small saucepan over low heat while stirring. Remove from heat and gradually stir in approx. 2 – 3 tablespoons of quark without lumps. Then stir this mixture into the rest of the quark cream.
  4. Puree the drained apricots. Puree the raspberries separately as well. Stir one fruit puree into half of the quark mixture. Whip the cream until stiff and fold half into each half of the quark.
  5. Now the cake is assembled: Place the base on a cake plate and enclose it with a cake ring. Spread the apricot cream on top. Spread the raspberry cream on top in blobs, carefully smooth out and marble with a fork as desired.
  6. Cut the top dough lid into as many pieces of cake as you like and place them in a circle on the cream. Lightly press. Chill for at least 2 hours before serving. Then sprinkle with powdered sugar as desired.
