Tyrolean cheese salad

Ingredients for 4 servings:

  • 50 g hazelnuts, whole kernels
  • 1 bunch of chives
  • 1 small onion(s)
  • 4 tbsp Balsamic vinegar (apple balsamic vinegar)
  • salt and pepper
  • 1 tbsp honey, liquid
  • 4 tbsp oil (hazelnut oil)
  • 1 bunch of radishes
  • 250 g mixed leaf salad
  • 100 g mountain cheese (Tyrolean)

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 30 minutes

Chop the hazelnuts and roast them in a pan without fat until golden brown. Remove from the pan and let cool. Wash the chives and cut into rolls. Peel and finely dice the onion. Mix the vinegar with salt, pepper, and honey and whisk in the hazelnut oil. Stir in the chives, nuts, and onion. Trim and wash the radishes and lettuce. Slice the radishes. Spin the lettuce dry and tear into pieces. Toss the lettuce and radishes with the dressing and arrange on plates. Grate the cheese finely over the top. Schüttelbrot or brown bread goes best with this.
