Tyrolean onion soup

Ingredients for 4 servings:

  • 750 g onion(s)
  • 100 g butter
  • 125 g diced ham
  • 3 tbsp flour
  • 250 ml meat broth, hot
  • 750 ml milk, hot
  • 1 tsp thyme, fresh or dried
  • 1 bunch of chives
  • 1 pinch(s) of sugar
  • some salt
  • some pepper from the mill
  • some nutmeg

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

simple and delicious

Peel the onions and slice into thin rings. Melt the butter in a saucepan and sauté the onion rings until translucent. Add the ham cubes and simmer for a few minutes. Add the flour and simmer for 3 minutes, stirring continuously. Gradually stir in the meat broth, then add the milk while stirring. Season the soup with the crushed thyme and simmer over low heat for 20 minutes. Wash, dry, and finely chop the chives. Season the soup with sugar, salt, freshly ground pepper, and nutmeg. Sprinkle with the chives and serve immediately.
