Tzatziki with Skyr

Ingredients for 4 servings:

  • 500 g Skyr
  • 2 garlic cloves
  • ½ cucumber(s)
  • salt and pepper
  • 1 tbsp herb mix, Greek
  • 1 dashes lemon juice

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Pour the skyr into a bowl. Press in the garlic and mix. Grate the cucumber into a sieve or other bowl and gently squeeze the juice. (I always do this so it doesn’t taste watered down later.) Add the grated and squeezed cucumber pieces to the skyr mixture. Finally, season to taste with salt, pepper, the Greek herbs, and perhaps a squeeze of lemon juice, and mix well. A quick tip: It’s best to let it sit in the fridge for another hour to taste even better.
