Ideas for using up tomatoes

You can prepare many simple dishes from fresh tomatoes and use your harvest or leftovers. We have put together a few ideas for you on what you can conjure up with tomatoes:

  • Tomato ketchup: Homemade ketchup is significantly healthier than the ready-made variety, as you choose the ingredients yourself. For example, you can use less sugar.
  • Tomato sauce: Pasta needs a juicy tomato sauce. If you puree your tomatoes, you have a homemade pasta sauce in no time at all.
  • Dried tomatoes: If you dry your tomatoes in the oven or in a dehydrator, many of the nutrients are retained and the fruit has a much longer shelf life.
  • Tomato spread: You can enjoy this with fresh bread or use it as a dip for meat and vegetables.
  • Tomato salsa: Salsa is a spicy sauce that tastes great on pizza or bruschetta, for example.
  • Tomato paste: Is suitable for the preparation of sauces and other dishes and is even more intense in taste when you make it yourself.
  • Tomato juice: If you don’t only like tomato juice on the plane, you can make your own drink from the tomatoes.

Tomato soup recipe

Tomato soup is ideal for cooking in advance and freezing if, for example, you want to use large quantities of tomatoes. For four portions of soup, you need 1 kg of tomatoes, 3 cloves of garlic, 2 onions, 750 ml of vegetable stock, some olive oil, 3 teaspoons of tomato paste, salt, and pepper, dried thyme, and parsley.

  • Score the bottom of the tomatoes, place them in a bowl, and pour boiling water over them.
  • Let the tomatoes soak for ten minutes, then carefully peel off the skin and stalk.
  • Cut the tomatoes and onions into small cubes, press the garlic and sauté everything in a little olive oil in a large pan.
  • Deglaze with the vegetable broth and season with salt, pepper, and thyme.
  • Let the tomato soup simmer on low heat for 20 minutes.
  • Add the tomato paste and puree everything with a hand blender.
  • Serve with a sprinkling of parsley, or allow to cool and then freeze.
