Vegan and wholesome garlic dip

Ingredients for 4 servings:

  • 215 g sunflower seeds
  • 2 tbsp olive oil, cold-pressed
  • ½ lemon(s), juice
  • 1 tsp rock salt
  • ½ cucumber(s)
  • 1 garlic clove(s)
  • e.g. Dill, fresh

Instructions

Working time approx. 10 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 10 minutes

tastes similar to tzatziki and goes well with grain patties

Soak the sunflower seeds in water for about 12 hours. Then puree the seeds. Add the other ingredients one by one and puree as well. Finally, add a little water if desired and season with lemon juice and dill. Chill the dip and serve chilled. I like it a lot with grain/vegetable and lentil patties. It’s also delicious with vegan gyros (seitan or tofu).
