Vegan apple and cinnamon porridge for breakfast

Porridge is a warm breakfast that tastes particularly good on cold days. For one serving you need 200 ml water, 50 ml plant-based milk (e.g. almond milk), 50 g tender rolled oats, a pinch of salt, half an apple, a teaspoon of maple syrup, half a teaspoon of cinnamon and toppings of your choice.

  • Grate the apple and place it in a small saucepan. Add the water, flakes and a pinch of salt. Bring the ingredients to a boil while stirring constantly.
  • Reduce the heat so it is gently simmering.
  • Now add the plant-based milk, maple syrup and cinnamon.
  • When the porridge has reached the desired consistency, transfer it to a bowl.
  • You can use almond slivers, almond leaves, finely chopped apples, banana slices or raisins as toppings.

Vegan scrambled tofu

If you prefer something hearty in the morning, try scrambled tofu. For one serving you need: a small onion, 100-150 g tofu (natural), a teaspoon of turmeric, salt, pepper, paprika powder, a pinch of Kala Namak, a tablespoon of soy sauce, some plant-based milk and oil for frying, as well as spring onions or chives for garnish.

  • Mash the tofu with a fork. Cut the onion into small pieces.
  • Put oil in a pan and fry everything.
  • When the tofu is browning, season the scrambled tofu with soy sauce, a dash of plant-based milk, and spices.
  • Place the scrambled tofu on a plate and sprinkle with chopped spring onions, for example.
  • Baked beans, fried tomato halves and mushrooms as well as vegan sausages go well with this.

Vegan soy yoghurt bowl with fruits and nuts

If you have to be quick in the morning, a yoghurt bowl is suitable for a vegan breakfast. For this, you need 250 g soy yoghurt (plain or vanilla), a teaspoon of chia seeds, fruits of your choice (e.g. bananas, apples, kiwi, berries, etc.) and nuts of your choice (e.g. walnuts or almonds).

  • Put the yoghurt with the chia seeds in a bowl and mix them together.
  • Cut the fruit as you like. Chop the nuts.
  • Scatter the sliced ​​fruit over the yoghurt and sprinkle over the chopped nuts.

Vegan breakfast toasts with avocado

For vegan breakfast toasts, you need two slices of whole wheat toast, some hummus, half a ripe avocado, a tomato, half a red onion, salt and pepper.

  • Toast the whole grain toast. Thinly slice the avocado half and the tomato, and cut the onion into rings.
  • Spread hummus on the toast slices.
  • Top the toast with the avocado first. Sprinkle some pepper on top. Now place the tomato slices on the avocado and lightly salt them. Finally, spread the onion rings over the tomatoes.
