Vegan burger patties

Ingredients for 5 servings:

  • 100 g oat flakes
  • 1 can kidney beans
  • 1 can of corn
  • 1 carrot(s)
  • ½ zucchini
  • 4 mushrooms
  • ½ bell pepper(s)
  • 1 onion(s)
  • 2 garlic cloves
  • 2 tbsp tomato paste
  • 1 tsp turmeric powder
  • salt and pepper
  • possibly herbs, e.g. herbs of Provence

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 5 minutes

Rinse the kidney beans and drain with the corn. Roughly chop the vegetables, grate the carrot, and place them in a food processor or blender. Add all the other ingredients and chop until the desired consistency is reached. Then fill a small bowl with water. Before forming the patties, moisten your fingers so the mixture is easier to shape and spread on the baking paper. Preheat the oven to 200°C fan/convection oven and bake the patties on the middle rack for about 25 minutes. A few minutes before the end of the baking time, you can spread a slice of vegan cheese on the patties. The vegetables listed can be swapped out as desired, depending on what you have on hand. If you like, you can also use red lentils or chickpeas.
