Vegan meatballs made from brown lentils

Ingredients for 2 servings:

  • 270 g lentils, brown, pre-cooked and drained
  • 50 g oat flour
  • 1 tbsp flaxseed meal
  • 4 tbsp water
  • 2 tbsp tomato paste
  • 1 tbsp oil
  • 1 tsp salt
  • 1 tsp paprika powder, optional
  • some oil for frying

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Simple and vegan

Combine the flaxseed meal and water in a small bowl and let it soak for 10 minutes. Combine the precooked brown lentils with the remaining ingredients in a food processor and blend until a chunky mixture forms. Form the mixture into equal-sized balls. Heat a little oil in a pan, add the balls, and fry over medium heat until golden brown. Enjoy on its own or with a dip or tomato sauce.
