Ingredients for 1 servings:

  • 120 g margarine
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 120 g sugar
  • ½ pack of baking powder
  • 200 g flour
  • 2 tbsp lemon juice
  • 1 pack of cream pudding powder or vanilla
  • 80 g applesauce
  • 600 g plum(s), fresh

Instructions

Working time approx. 30 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 30 minutes

for a 26 cm springform pan

In a bowl, mix margarine, vanilla sugar, a pinch of salt, and 100g of sugar until creamy. Add baking powder, sifted flour, and lemon juice and mix to form a batter. Mix the pudding mix into the applesauce and fold into the batter. Wash the plums, halve them, pit them, toss them with the remaining sugar, and place them cut-side down in a greased and floured 26cm springform pan. Spread the batter evenly over the fruit and bake the cake in a preheated oven at 175°C (top/bottom heat), 155°C (fan oven) for about 45 minutes. Let cool for 15 minutes, carefully loosen the pan, and turn the cake out onto a cake plate.
