Ingredients for 1 servings:

  • 150 g salt sticks or pretzels, vegan
  • 500 g wheat flour
  • 1 packet of dry yeast
  • 1 tsp salt
  • 1 tsp sugar
  • 500 ml water, lukewarm
  • Pretzel brine

Instructions

Working time approx. 5 minutes; Rest time approx. 1 hour 45 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 2 hours 45 minutes

with pretzel sticks in the dough

Roughly crumble the pretzel sticks or pretzels and mix them with the flour, yeast, salt, and sugar in a mixing bowl. Add the water while kneading with a mixer and let the dough knead for about 10 minutes, until it starts to pull away from the edges. Cover the dough and let it rise in a warm place for about 90 minutes, until it has increased in volume significantly. Then knead briefly again and place it in two small or one large Kaiser baking pan. Preheat the oven to 250 degrees Celsius (480 degrees Fahrenheit). Let the dough rest for 15 minutes. Once the oven is heated, brush the bread generously with the lye and bake for 15 minutes at 250 degrees Celsius (480 degrees Fahrenheit), then for another 30-40 minutes at 200 degrees Celsius (400 degrees Fahrenheit). The bread is done when it sounds hollow when tapped.
