Vegan rice currywurst style

Ingredients for 1 servings:

  • 200 g rice
  • 300 ml water, approx.
  • 200g tofu
  • 1 bell pepper(s)
  • 100 ml sauce (currywurst sauce), vegan
  • 2 basil leaves, fresh

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

Add the rice and water to the rice cooker. Cut the tofu and bell peppers into bite-sized pieces. Shortly before the rice is finished cooking, sauté the bell peppers in the pan, then add the tofu and fry well. Remove the pan from the heat and let it cool slightly, then add the currywurst sauce and heat everything together over low heat. Transfer the rice to a plate and serve with the rest of the ingredients. Garnish with some fresh basil, if desired. You can either make the sauce yourself using a vegan recipe or use a ready-made one.
