Vegan savoy cabbage stew

Ingredients for 4 servings:

  • 1 small onion(s)
  • 400 g savoy cabbage
  • 5 m.-sized potatoes
  • 2 carrots
  • 1 bell pepper(s), red
  • 1 liter vegetable broth
  • some vegetable oil
  • 2 tsp paprika powder, hot
  • 1 tsp caraway powder
  • 2 bay leaves
  • Salt
  • Sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Dice the onion and cut the other vegetables into bite-sized pieces. Heat the oil in a large pot and sauté the diced onion until translucent. Then add the carrots, bell peppers, savoy cabbage, and diced potatoes, along with the paprika and caraway seeds, and sauté briefly. Top up with the vegetable stock, add the bay leaves, and bring to a boil. Simmer over medium heat for about 15-20 minutes, until the vegetables are cooked to your desired consistency. Stir occasionally. Season to taste with salt and, if desired, a little sugar. Remove the bay leaves before serving.
