Vegan Spaetzle / Knöpfle

The perfect vegan spaetzle / knöpfle recipe with a picture and simple step-by-step instructions.

  • 200 g Spelled flour or wheat flour
  • 100 g Durum wheat spelled semolina
  • 1 Msp Turmeric
  • 1 Msp Salt
  • Water
  • *************
  • Water for boiling
  • 1 tbsp Salt
  1. Weigh the flour in a bowl, add the semolina, salt and turmeric, mix these dry ingredients well and add enough water until a tough dough is obtained by stirring vigorously.
  2. Let the dough rest for about 10 minutes and during this time bring a saucepan with water, a little salt and turmeric to the boil.
  3. The one with the spaetzleria or I put something else on the pot, spread the dough in the boiling water and let the spaetzle / knöpfle boil, when they are up, fish off with a skimmer – done 🙂
