Vegan vanilla pudding with fruit

Ingredients for 2 servings:

  • 1 pack of pudding powder, vanilla
  • 500 ml milk (rice milk), vanilla, e.g. from Alnatura
  • 250 g fruit, frozen, exotic mix
  • n. B. sugar

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Mix a few tablespoons of the vanilla rice milk with the pudding mix and sugar, if desired. I don’t use any additional sugar, as the rice milk is naturally sweet. However, this might not be sweet enough for some people. Bring the remaining vanilla rice milk to a boil and mix with the stirred pudding mix. Bring back to a boil. Empty the frozen fruit into a bowl. Pour the hot pudding mixture over the mixture and let it cool. It’s quick because of the frozen fruit. I also like to eat it for breakfast instead of cereal.
