Ingredients for 4 servings:

  • some oil
  • 1 m.-sized onion(s)
  • 1 tbsp tomato paste
  • 1 stalk(s) leek
  • ¼ bulb(s) fennel
  • 2 mushrooms
  • 2 ½ liters of water
  • 1 pinch of curry powder
  • some pepper
  • 1 tbsp salt
  • 1 tsp agave syrup
  • 2 kaffir lime leaves

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 3 hours; Total time approx. 3 hours 30 minutes

First, heat a large pot and add a little oil. Halve the onions with the skin on and fry them with the tomato paste. Chop the vegetables, add them, and fry briefly. Add the water. Add the spices, agave syrup, and kaffir lemon leaves to the water. Then simmer the broth for at least 1 hour over medium heat. Finally, strain the broth and squeeze the juice from the vegetables.
