Vegetable casserole with king prawns

Ingredients for 2 servings:

  • 500 g vegetable mix (Kaisergemüse), frozen
  • 200 g shrimp(s) (king prawns), frozen
  • 100 ml cream
  • 1 m.-sized eggs
  • 150g mozzarella
  • 1 clove(s) garlic, finely chopped or more, as needed
  • Salt and pepper, freshly ground
  • some parsley, fresh, chopped
  • some smoked salt
  • some oil for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Thaw the shrimp and vegetables and pat dry. Combine the cream, egg, parsley, salt, pepper, and garlic and season generously. Divide the vegetables between two oiled, ovenproof casseroles. Top with the shrimp and pour the cream mixture over them. Bake the casserole in the oven at 220°C for about 30-40 minutes, until the egg mixture sets. Slice the mozzarella, place it on top of the casserole, and bake for another 5 minutes, until the cheese melts. Sprinkle some smoked salt over the melted cheese.
