Vegetable – corn flour coins

Ingredients for 4 servings:

  • 2 carrots
  • 1 bell pepper(s)
  • ½ zucchini
  • 1 stalk celery
  • 2 tomatoes
  • e.g. peas
  • 3 eggs
  • 3 tsp heaped breadcrumbs
  • 4 tsp, heaped corn flour
  • e.g. milk
  • salt and pepper
  • oil
  • nutmeg
  • Paprika powder, sweet

Working time approx. 10 minutes; Total time approx. 10 minutes

ideal for children who don’t like vegetables

Wash, trim, peel, and chop the vegetables into small pieces, then place everything in a bowl. Add the eggs and milk and blend everything with a hand blender until thick. Add the breadcrumbs and cornflour, season with spices, and mix everything thoroughly. Add more breadcrumbs and cornflour if necessary and blend again. Heat a little oil in a pan. Using a tablespoon, drop small portions into the pan and press them down. Fry on both sides, turning several times to prevent them from burning. My kids absolutely love these, even though they don’t usually hate vegetables. I usually make them with three or four different vegetables, such as root vegetables, tomatoes, bell peppers, zucchini, bell peppers, celery, peas, etc. The sky’s the limit. Great as finger food.
