Vegetable muffins

Ingredients for 1 servings:

  • 2 small bell peppers
  • 100 g mushrooms
  • 1 small zucchini
  • 1 tbsp chives
  • 3 tbsp cream
  • 6 eggs
  • Gouda, grated
  • 6 cocktail tomatoes
  • some nutmeg
  • salt and pepper
  • Fat and breadcrumbs for the form

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Low-carb

Whisk together the eggs, cream, and chives. Season with salt, pepper, and nutmeg. Clean and finely chop the vegetables, then mix everything together. Grease a muffin tin and dust with breadcrumbs. Pour in the mixture and sprinkle with grated cheese. Bake in a preheated oven at 200°C (top/bottom heat) for about 20 minutes. The muffins are delicious hot or cold. The ingredients can be varied.
