Ingredients for 4 servings:

  • 1 m.-sized onion(s)
  • 1 can peas
  • 1 can of corn
  • 2 large carrots
  • 3 eggs
  • 2 handfuls of oat flakes
  • some breadcrumbs
  • salt and pepper
  • nutmeg
  • Parsley
  • some oil
  • some water

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Finely chop the onions and grate the carrots. Cut the carrot ends into small pieces with a knife. Fry the onions first, then the larger carrot pieces (ends). After about 3-5 minutes, add the peas and corn. Pour over a little water after a few minutes. Mash the pea and corn mixture. Do not puree, as larger pieces are better in the patty. Add the grated carrots. Season the vegetable mixture with salt, pepper, nutmeg, and parsley. Remove the pan from the heat and let cool. Mix the beaten eggs, oatmeal, and breadcrumbs into the mixture. Adjust seasoning if desired. The mixture has the right consistency when it sticks to a spoon. Heat the oil in a pan. Form small patties from the vegetable mixture. Fry until golden brown on both sides.
