Vegetarian broccoli quiche with almond flakes

Ingredients for 1 servings:

  • 600 g pizza dough
  • Oil for the tray
  • 700 g broccoli florets
  • 300 g cherry tomatoes, mini, halved
  • 200 g feta cheese, shredded
  • 150 g butter
  • 200 g onion(s), diced
  • 3 garlic cloves, diced
  • 200 g crème fraîche
  • 3 eggs
  • 250 g milk
  • 1 tsp vegetable stock powder
  • e.g. salt and pepper
  • 2 tbsp flour
  • 150 g Gouda, grated
  • 50 g almond flakes or pine nuts

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Place the pizza dough on an oiled baking sheet. Spread the broccoli over the dough, then top with the halved cherry tomatoes and feta cheese. Melt the butter in a pan. Sauté the onions and garlic in it. Remove the pan from the heat. In a bowl, add the onions and garlic, crème fraîche, eggs, milk, vegetable stock powder, salt, pepper, and flour, and whisk everything together. Stir in the Gouda cheese. Spread this mixture over the vegetables and feta with a ladle. Sprinkle with either the flaked almonds or pine nuts on top. Bake the quiche in a preheated oven at 190°C (fan oven) for about 25 minutes.
