Ingredients for 4 servings:
- 150 g walnuts, chopped
- 150 g onion(s), chopped
- 100 g rice
- 80 g mountain cheese, grated
- 80 g Parmesan, grated
- 4 eggs
- 1 garlic clove(s)
- salt and pepper
- e.g. instant vegetable broth
- 3 tsp mustard, medium hot
- e.g. parsley
- e.g. breadcrumbs
- n. B. Clarified butter for frying
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes
Cook the rice according to the package instructions and let it cool. You can also use leftover rice from the day before. Mix all ingredients, except the broth and breadcrumbs. Now add a little vegetable broth, knead everything thoroughly, and season to taste. Finally, add enough breadcrumbs and knead until the consistency is right. Form the dough into meatballs and fry them in clarified butter. We served them with potato gratin and salad. I also like to eat the meatballs with avocado dip or chili sauce.
