Vegetarian meatballs

Ingredients for 3 servings:

  • 75 g walnuts
  • 75 g onion(s)
  • 50 g brown rice
  • salt water
  • 75 g mountain cheese
  • 2 eggs
  • 2 garlic cloves
  • 1 tsp herbal salt
  • 1 tsp vegetable broth
  • 1 tsp mustard, hot
  • 1 tbsp mixed herbs
  • 1 pinch of pepper
  • 1 pinch of nutmeg
  • 40 g wholemeal breadcrumbs

Cook the brown rice in salted water and let it cool. Meanwhile, chop the walnuts, finely chop the onions, and grate the mountain cheese. Mix everything together, add the eggs, and season with herb salt, vegetable stock, nutmeg, and pepper. Stir in the whole-wheat breadcrumbs and place small heaps of the mixture on a baking sheet. Sprinkle with some mountain cheese, if desired, and then bake in the oven at 175°C for 25 minutes. You can also skip the breadcrumbs and pan-fry the meatballs.
