Vegetarian spring pan with feta cheese

Ingredients for 1 servings:

  • 1 small zucchini
  • 2 carrots
  • 3 radishes
  • 1 onion(s), red
  • 100 g feta cheese or sheep’s cheese
  • 1 clove(s) garlic
  • Thyme
  • oregano
  • 3 tbsp orange juice
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • salt and pepper
  • Sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Wash the zucchini. Peel the carrots. Slice both lengthwise into thin slices, possibly using a bread slicer, or grate them. Trim and quarter the radishes. Peel the onion and slice or grate into rings. Marinate the vegetables with oil, orange juice, and red wine vinegar. Crush the garlic. Season with herbs, salt, pepper, and sugar. Transfer to an ovenproof dish and arrange slices of feta cheese on top. Bake for 30 minutes in a preheated oven at 220°C (top/bottom heat). If desired, grill for the last few minutes. Serve with crusty baguette or bread rolls.
