Vegetarian stew, grandma's style

Ingredients for 4 servings:

  • 50 g butter or margarine
  • 1 onion(s), diced
  • 250 g carrot(s), diced
  • 50 g celery, cut into strips
  • 250 g tomatoes, cut into pieces
  • some salt
  • 500 g potatoes, cut into small pieces
  • 500 g cauliflower, in florets
  • ¼ liter of water
  • some parsley, chopped

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Melt the fat over high heat. Add the onion, celery, and tomatoes and heat for 5-10 minutes, stirring occasionally. Then season the vegetables with salt, add the potatoes, cauliflower, and water, and bring to a boil. Then reduce heat to low and simmer for about 30 minutes. Season the stew with salt and sprinkle with parsley.
