Vegetarian stuffed cucumber with peppers and sour cream

Ingredients for 2 servings:

  • 2 large cucumbers or 3 smaller ones
  • Herbal salt or wild garlic salt
  • 200 g sour cream
  • ½ bell pepper(s), yellow
  • 1 small onion(s)
  • 2 cloves garlic
  • herbal salt
  • pepper
  • Paprika powder or chili, optional
  • 2 slice(s) cheese, approx.

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Wash the cucumbers and halve them lengthwise. Remove the core with a spoon. Place them in a baking dish. Season with herb salt. Wash the bell peppers, halve them, remove the seeds, and dice them. Peel and finely dice the onion and garlic. Mix all the ingredients for the filling and season to taste. Fill the cucumbers with the filling. Cut the cheese into pieces and place it on top. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit) and bake for about 25 minutes. The cheese should be browned and the cucumber should have a pleasant bite.
