Vegetarian vegetable curry

Ingredients for 2 servings:

  • 2 carrots
  • 1 onion(s)
  • 1 garlic clove(s)
  • 1 head of broccoli, approx. 500 – 600 g
  • 1 small piece(s) of ginger root
  • 1 can of coconut milk, approx. 400 g
  • 1 lemon(s), juice
  • 2 tbsp curry powder
  • 1 tsp salt
  • some pepper
  • 1 pinch of chili flakes
  • 2 nectarines or peaches

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Cut the broccoli into florets and cook until al dente. Finely chop the onion, garlic, and ginger and sauté in a little oil in a pan. Finely dice the carrots and add them to the pan. Deglaze the vegetables with the coconut milk and add the curry powder. Finely dice the nectarines or peaches and add them to the pan, bringing to a boil briefly. Add the broccoli and season with the spices and lemon juice. Serve with basmati rice.
