Viennese-style onion soup

Ingredients for 4 servings:

  • 250 g onion(s)
  • 4 tbsp oil
  • 40 g flour
  • 1 liter vegetable broth
  • salt and pepper
  • 3 slices of white bread or toast
  • 3 slices of cheese
  • ½ bunch chives

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

unlike French onion soup

Slice the onions into thin rings and fry in oil until golden brown. Dust with flour and fry for a little longer. Pour in the broth and simmer for 20 minutes, seasoning with salt and pepper. Top the bread slices with the cheese, cut into cubes, and place cheese-side up under the grill or in a hot oven for 2 minutes. Serve the soup garnished with the cheese croutons and sprinkled with chopped chives.
