Warm Caprese Salad

Ingredients for 2 servings:

  • 2 tbsp olive oil
  • 12 small tomatoes (vine tomatoes)
  • Sugar
  • Salt
  • black pepper
  • 4 tbsp Balsamic vinegar Rosso
  • ½ mozzarella
  • Basil, fresh

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Halve or quarter the tomatoes, depending on size and taste. Halve the mozzarella and slice very thinly. Heat olive oil in a non-stick pan. Place the tomatoes cut-side down in the pan (careful, they might splatter!) and let them brown slightly. Sprinkle sugar evenly over the tomatoes, toss gently, and let them caramelize briefly. Season with salt and pepper. Deglaze with balsamic vinegar and let it reduce briefly. Remove the pan from the heat before the tomatoes completely melt. Arrange the tomatoes on a warmed dish and top with mozzarella slices. Wait a moment, if necessary, until the cheese has melted slightly. Garnish with basil leaves. Enjoy! (The amounts for sugar and balsamic vinegar are only estimates; I always do it by feel. Vary the amounts to suit your taste.)
