- 20 g butter
- 100g Gorgonzola
- 250 ml cream
- Salt
- Black pepper, freshly ground
- Nutmeg, freshly grated
- 1 bunch parsley, flat-leaf, chopped

Gently heat the butter in a saucepan, mash the cheese with a fork, stir in the cream, and let it reduce slightly. Season with salt, pepper, and nutmeg, and add the parsley. Serve with pasta, gnocchi, or veal medallions.
