What Are Poulards Actually?

Poulards are chickens that are fattened for around ten to twelve weeks. However, the poultry is slaughtered before they are sexually mature. By then, the animals have reached a weight of up to 3.5 kilograms. Poulards may only be designated as such if they have a slaughter weight of at least 1.2 kilograms.

Both whole animals and individual parts of the poultry, i.e. breast, wings, or thighs, are commercially available. A special type of poulard is the corn-fed poulard. Like any corn fowl, these animals are fed primarily corn and have yellowish skin and flesh. Poularde has a fairly strong and aromatic taste. It is often roasted or grilled and develops its aroma particularly intensively.
