White bean salad with anchovies

Ingredients for 4 servings:

  • 250 g beans, white, dried
  • 2 onions, red
  • 2 tomatoes
  • some anchovies in brine
  • 2 tbsp parsley, chopped, frozen
  • olive oil
  • Salt
  • Black pepper, coarsely ground
  • possibly garlic cloves, approx. 2 – 3

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 15 minutes

simple and delicious

Bring the beans to a boil in salted water. Reduce the heat and simmer for about 2 hours. If desired, add the peeled garlic cloves. When the beans are cooked, drain them and let them cool in a serving bowl. Finely dice the onions and deseeded tomatoes. Rinse the anchovies briefly (!) under cold water and also finely chop them. Combine the onions, tomatoes, anchovies, and parsley with the beans, along with plenty of olive oil. Season with salt and pepper. Tastiest the next day.
