Whole-grain cherry plotzer

Ingredients for 6 servings:

  • 500 g wheat bran
  • ½ liter milk, possibly more
  • 80 g butter, soft
  • 80 g honey
  • 1 tsp cinnamon
  • 2 jars of pitted morello cherries, large jars
  • 6 egg yolks
  • 6 egg whites
  • some butter for the mold
  • some breadcrumbs for the mold

Instructions

Working time approx. 20 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 1 hour; Total time approx. 13 hours 20 minutes

Soak the freshly ground cracked wheat flour in 1/2 to 3/4 liter of milk overnight. Cream the butter with sugar, honey, and egg yolk until fluffy, then stir in the cinnamon. Stir the mixture into the soaked cracked wheat flour. Stir in the morello cherries. Finally, fold in the stiffly beaten egg whites and pour into a baking dish greased with butter and sprinkled with breadcrumbs. Bake for 1 hour at 175°C (350°F) fan-assisted oven. Serve with vanilla sauce (approx. 1 liter for 6 people).
