Ingredients for 2 servings:

  • 150 g whole grain rice (short grain rice)
  • 300 ml rice milk (rice drink)
  • 80 ml coconut milk
  • 1 pinch of Bourbon vanilla pod(s), pulp
  • 1 tsp honey
  • 2 oranges
  • ½ cup mango juice
  • 1 pinch of cinnamon
  • 1 pinch of Bourbon vanilla pod(s), pulp
  • Locust bean gum

Instructions

Working time approx. 15 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Bring the rice drink and coconut milk to a boil. Then add the rice and vanilla and simmer for about 40 minutes, stirring occasionally. Meanwhile, peel the oranges and cut them into small pieces. Place them in a small saucepan along with the mango juice, spices, and locust bean gum and mix well. Bring everything to a boil briefly. After 40 minutes, remove the rice from the heat, stir in the honey, and let it steep for 5 minutes. Pour the sauce over the rice and serve.
