Whole wheat gnocchi

Ingredients for 2 servings:

  • 250 ml vegetable stock
  • 125 ml milk
  • 200 g wheat bran or spelt bran
  • some butter
  • 2 eggs
  • Salt
  • nutmeg

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Bring vegetable stock, milk, and a small knob of butter to a boil. Season with salt and nutmeg. Pour in the cracked wheat flour (I always use coarse flour) all at once and cook, stirring, until a ball forms. Remove the pan from the heat and let it cool briefly. Stir the two eggs into the batter. Form gnocchi with your hands and place them in boiling salted water. Let stand for 15 minutes (the water should not boil). Remove from the water, drain, and serve.
