Bamboo shoots sometimes referred to as “bamboo sprout,” should never be eaten raw. When raw, they contain a toxic compound of hydrocyanic acid. The sprouts must be cooked before consumption. In this way, the hydrocyanic acid is rendered harmless during the cooking process. Then dispose of the cooking water. However, as a precautionary measure, you should refrain from regularly and excessively consuming freshly prepared bamboo shoots. To be on the safe side, children, in particular, should not eat large amounts of food.
However, bamboo shoots in this country are usually not fresh, but available from a can or in a jar. This pre-cooked variant is harmless to health. However, since these sprouts quickly overcook and then disintegrate, you should always add them when the dish is almost ready to serve – then reheat thoroughly. If you use bamboo shoots for cold dishes, such as salads, you can blanch them beforehand. In this way, crunchiness and the subtle taste of its own are retained.
The sprouts are usually already pre-cut (in pieces or slices) in jars or cans, so you only have to pour off the liquid and then use them immediately. If you use dried or salted bamboo shoots, they should be soaked before further processing and then rinsed thoroughly. With the fresh version, the tip is cut off with a knife before use and scored once lengthways. Now the outer leaves and the shoot base can be removed.
